What?! Seriously? Yes–TWO ingredients only to make this delicious 2 Ingredient Banana Pancake Recipe. It really is that simple, and yes–the banana and egg make a perfect pourable pancake batter consistency. I find myself turning to these all the time because they’re so easy and I love the way I feel when I eat them!
There are several variations of this two ingredient pancake recipe, but I wanted to share the basic one with you. I’ve added vanilla, cinnamon, 1/4 teaspoon of baking powder to puff them up a little… you can really do just about everything with them. I’ve even heard of people making savory two ingredient banana pancakes!
- In a blender, combine banana and eggs. Blend until smooth.
- Coat a medium skillet with nonstick cooking spray. For each pancake, pour 1/4 cup batter onto skillet. Cook over medium heat until browned, about 2 minutes per side.
- Top with banana slices and honey, if desired.
